Will
With over 22 years of bar industry experience Will brings flash, speed, and island flair to his well balanced, tropical touched libations. Will broke into the cocktail industry after college in 1997 after moving to Vail, Colorado from Massachusetts after college. Vail’s bustling bar and restaurant scene was vibrant enough to catch his attention, and he quickly decided to put his efforts in that direction. With efficiency born of years of experience, and a natural ease with his patrons, Will puts everything into his pursuit of mixological excellence.
Guido
Jeff “Guido” Gildroy (pronounced GHEE- Doh) started his first bar job at the tender age of sixteen in his home state of Pennsylvania. He moved to Vail, Colorado in the early 90’s to seek out new adventures and opportunities. Guido’s classic bar style and handlebar mustache will time warp you back to the days of prohibition speakeasies. This former iron bartender champion is unparalleled in knowledge, skill and personality.
Brandon
Brandon Towle began his hospitality career nearly twenty years ago in Normal, Illinois. Starting as a busser at an Olive Garden, Brandon quickly rose through the back of house ranks, learning flavor profiles and compositions. Soon after, he transitioned to front of house as a server where he honed his ability to provide a sensational guest experience; figuring out just the right questions to ask when the guests themselves didn’t know what they were looking for.
In 2008, Brandon moved to St John, USVI and has called the little rock home ever since. He began his island career at Fatty Crab and used his kitchen-spawned knowledge of flavor to design cocktails. Ten years later, Brandon has worked behind the stick of some of St. John’s best local ingredients and unique flavors. Each drink is carefully crafted according to guest specifications and each with its own original twist.
